  7. Ingredients:
  8. 1/2 c. brown rice             1 c. veggie stock
  9. 1 tablespn. olive oil         1 finely chopped onion
  10. 1 zuchinni, thinly sliced     2 tablespns. chopped basil
  11.  
  12. Instructions:
  13. In a heavy 2 qt. casserole, saute onions in the olive oil
  14. til golden.
  15. Stir in rice, stock and cover with lid.  Cook on medium heat
  16. for 30 min.
  17. Add zuchionni zuchinni and basil and lightly toss.
  18. Serve with mixed salad and toasted whole grain bread.

  21. You can cut up some chicken and cook it in along with the
  22. rice, but I'm vegetarian so that makes me kind of ill
  23. personally

  25. naught to contribute 'e ought not to complain. This is low-
  26. fat and vegetarian.
